Nan Hwa Chong Fish-Head Steamboat Corner

Since the BF was on his high-protein, less fried food diet, we went to have fish steamboat at Nan Hwa Chong for dinner after working out at the gym. The light and clean flavours of the fish steamboat here make for a very healthy dinner. Nan Hwa Chong also cooks up a decidedly small range of cze char dishes to supplement their fish steamboat offerings. But what they lack in variety, they make up for it in quality. I've tried about a third of the cze char fare here and they've all been stellar dishes.

The Mixed Vegetables ($8) wasn't at all what we expected. It was an unusual medley of lady's fingers, brinjal and long beans, sauteed in a spicy prawnish oyster sauce, and topped with crisp ikan bilis.


The Braised Mushrooms ($12) was pretty excellent too, choc-a-bloc with broccoli, carrots, and baby corn bathed in a velvety gravy redolent of oyster sauce and ginger.

Nan Hwa Chong serves 4 types of fish, garoupa, red snapper, pomfret and song fish. We prefer the red snapper, its flesh is softer than garoupa and it's got that clean clear flavour of seawater fish. We ordered the Red Snapper Fish-Head Steamboat, sans garland chrysanthemum as usual ($22). The broth was clear, light and sweetly infused with the essence of fish bones. No short-cut, sickly sweet condensed milk needed to enhance the soup, because the soup is already flavoursome as it is. It was brimming with fried yam, soft red snapper pieces, fried sole fish, seaweed and cabbage. I could eat this on its own with rice. It's THAT good.
